Brown Butter and Maple Pumpkin Cookies

Ingredients:
  • 1 cup unsalted butter
  • 1-1/2 cups dark brown sugar
  • 1 large egg yoke
  • 3 tablespoon pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree
  • 2-1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1-1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • Coating:
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • Instructions:
    1. Brown the butter and pour into a measuring cup. Place in the fridge for 20 minutes but don't let it solidify.
    2. Pre-heat the oven to 350F and line a large baking sheet with parchment paper.
    3. In a bowl, add the flour, baking soda, baking powder, salt and spices. Whisk to combine.
    4. In another bowl, whisk together the brown sugar, cooled brown butter, egg yolk, maple syrup, vanilla, and pumpkin.
    5. Fold the dry ingredients into the wet using a rubber spatula. The dough shouldn't be too thin so refrigerate more if needed.
    6. In a small bowl, mix together the coating ingredients.
    7. Using a large scoop or 1/4 measuring cup, drop dough balls into the cinnamon sugar mixture and toss to coat them.
    8. Place the balls onto the baking sheet and then bake for about 12-15 minutes until the edges are darkened.
