Brown Butter and Maple Pumpkin Cookies

Ingredients:- Brown the butter and pour into a measuring cup. Place in the fridge for 20 minutes but don't let it solidify.
- Pre-heat the oven to 350F and line a large baking sheet with parchment paper.
- In a bowl, add the flour, baking soda, baking powder, salt and spices. Whisk to combine.
- In another bowl, whisk together the brown sugar, cooled brown butter, egg yolk, maple syrup, vanilla, and pumpkin.
- Fold the dry ingredients into the wet using a rubber spatula. The dough shouldn't be too thin so refrigerate more if needed.
- In a small bowl, mix together the coating ingredients.
- Using a large scoop or 1/4 measuring cup, drop dough balls into the cinnamon sugar mixture and toss to coat them.
- Place the balls onto the baking sheet and then bake for about 12-15 minutes until the edges are darkened.
